Brocolli Tater Tots

4 cups broccoli florets

2 large eggs

1/2 cup finely diced onion (if your family does not like onion, just use the powder listed below)

2/3 cup reduced-far shredded cheddar

1/2 cup panko bread crumbs (or make your own)

1/2 tsp each garlic and onion powder

1 tsp each salt and pepper

 

Boil broccoli florets for 1 minute, then immerse in cold water to stop cooking.  Drain well (very important) Chop broccoli finely and mix with lightly beaten eggs, onion, cheese, bread crumbs, garlic and onion powder, salt and pepper.

Refrigerate 15 minutes and heat oven to 400 degrees.  After mixture sets up in refrigerator, form tot shapes (about 2 Tbsp each) and place on baking sheet coated with PAM.  Mist tot tops with PAM and bake for 20 minutes, flipping halfway through until brown and crispy.
