Squash & Basil Salad

Squash & Basil Salad
Simply in Season cookbook

3 - 4 medium summer squash - julienned or zucchini noodles
2 - 3 T fresh basil, chopped
3 -4 T Parmesan cheese, grated
1 - 2 T garlic scapes, chopped

Toss these ingredients together in a bowl.

Make dressing:
¼ c red wine vinegar
¼ c olive oil
½ t. Salt
¼ t. Pepper
¼ t. Sugar

Mix and chill 1 hours, and serve.
Best eaten the same day.
May be served with lettuce and chopped green onions.
