1 c. oil

3 c. flour

 3 eggs

1 t. baking soda

 1 1/2 c. sugar

1 t. salt

 2 c. zucchini

1 t. baking powder

 2 t. vanilla

3 t. cinnamon

 Raisins or nuts (Optional)

1 t. nutmeg

Combine oil, eggs, sugar, zucchini and vanilla in a large bowl and mix well,. Add remaining ingredients and mix well. In another small bowl combine a little sugar, cinnamon and nutmeg. Spray an 8x8 pan with non-stick cooking spray and coat the sprayed pan with the sugar mixture. Cook for 40-50 minutes at 350 degrees.
